I stuffed some peppers with brown rice and lentils and simmered in a sauce made from fresh tomatoes, carrots, celery, bell pepper and herbs.

    haha I know that feeling of made too much. Luckily these were small locally grown peppers. This was enough for 2 people with some left overs and not a flood!
