Well, given that’s literally not what happened, I’m not sure why that’s more likely. The actual scene itself shows that Astarion is smiling in your face and doesn’t show any remorse or guilt or any other feelings. He only displays those when his face is hidden from the player/cameras typical view. You don’t pretend to look remorseful when no one can see you. There’s no point to it.
It’s the same reason people get excited over movies, or sports. It’s just a game, but it’s exciting and people can’t help getting attached to the characters and players.
It’s way more likely that he smiled when no one could see and composed himself before turning around and pretending to look remorseful.Edit:

I feel like you didn’t read the text. I’m also questioning if you even played his story in the game.
He’s not my favorite character but he’s well-written and you’d know how stupid your “way more likely” assumption is if you followed his story arc
